Apple, Celery & Sweet Potato Soup
Ingredients:
1 tablespoon olive oil
2 cups sliced onions or leeks
4 cups chopped celery
2 1/2 cups sweet potato, peeled and chopped
2 cups apple, peeled and chopped
1/4 teaspoon salt
2 cups vegetable stock
2 cups water
1 teaspoon fresh thyme, chopped
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon lemon juice
Directions:
1. Combine oil, water, onions, celery, sweet potato, apple and salt in soup pot.
2. Cook covered over medium heat for 10 minutes.
3. Add stock, water, thyme, nutmeg, and cinnamon and bring to a boil.
4. Lower heat and simmer 15 minutes until vegetables are tender.
5. Puree soup until smooth, then stir in lemon juice and serve.
