Beet Hummus

Ingredients: 

  • 2 cups cooked garbanzo beans

  • 1 cup cooked beet, peeled and cubed (about 1 small or 1/2 large beet)

  • Juice of 1 1/2 lemons

  • 1 large or 2 small garlic cloves, peeled & sliced

  • 1/4 cup unsalted tahini

  • 1 teaspoon sea salt 

  • 1/4 teaspoon cumin

  • 1-2 tablespoons cold water or 1-2 ice cubes 

Directions:

  1. Combine all the ingredients except for the water/ice cubes in a food processor. 

  2. Process until smooth, adding a little bit of water or ice at a time, until you reach the perfect thick and creamy consistency.

  3. Transfer to a serving dish, top with a drizzle of olive oil and fresh parsley if desired. Enjoy with fresh vegetables, bread or crackers.

Note: If you choose to make hummus without the beet, just blend all other ingredients. You may need a little more water to blend.
