Beets with Chive Cream

This super adaptable recipe uses yogurt or sour cream with whatever herbs you like, to make a delicious cooling sauce, which pairs perfectly with the earthy rich flavor of steamed beets.

INGREDIENTS

  • Whole beets

  • Water for boiling

  • Salt and pepper to taste

  • 1/2 cup plain unsweetened yogurt or sour cream

  • Handful of herbs (chives, green onion, wild onion, wild garlic, or cilantro), finely chopped

DIRECTIONS

  1. Boil whole beets in water until    tender all the way through (30-70 minutes depending on size).

  2. Drain and cool until safe to handle. Rub off the skins and discard.

  3. Chop beets in quarters, if small, or into more pieces if large.

  4. Toss beets with sea salt and pepper.

  5. Serve with chive cream (sour cream or yogurt mixed with chopped herbs.
