Salad Dressing

Italian Herb Vinaigrette

Ingredients:

  • 2 Tablespoons vinegar (red wine or apple cider vinegar)

  • 1-2 Tablespoons dried Italian herbs

  • 1 clove garlic, grated (or 1 tsp. garlic powder)

  • 1 Tablespoon brown dijon mustard

  • 1 Tablespoon honey or sweetener of choice

  • Pinch of sea salt

  • Pinch of black pepper

  • 6 Tablespoons olive oil

Directions:

Combine all ingredients except for the olive oil in the bottom of a large salad bowl*. Using a whisk, mix ingredients and slowly stream in the olive oil while whisking until everything is combined.

*Alternately, you can shake in a jar or whirl in a blender


Balsamic Vinaigrette

Ingredients:

  • 2 Tablespoons balsamic vinegar

  • 1 Tablespoon brown dijon mustard

  • 1 Tablespoon honey or sweetener of choice

  • Pinch of sea salt

  • Pinch of black pepper

  • 6 Tablespoons olive oil

Directions:

Combine all ingredients except for the olive oil in the bottom of a large salad bowl*. Using a whisk, mix ingredients and slowly stream in the olive oil while whisking until everything is combined.

Basic Vinaigrette Guidelines

Ingredients:

  • 2 Tablespoons acid (see notes below for suggestions)

  • 6 Tablespoons oil

  • Pinch of salt and black pepper

  • Optional additions: sweetener, grated/minced raw garlic or shallot, fresh or dried herbs, mustard, miso paste etc.

Suggested Ingredients:

ACID - apple cider vinegar, red wine vinegar, rice vinegar, white wine vinegar or lemon juice

OIL - olive oil, sesame oil (untoasted has a more mild flavor), sunflower oil, avocado oil

SWEETENER - honey, maple syrup or jam

Options for Mixing

  • Wisk in the bottom of a salad bowl, slowly streaming in the olive oil for a consistent mixture. Add salad greens just before serving.

  • Shake in a jar

  • Blend in a small blender
