Fennel Apple Slaw

INGREDIENTS

  • 1 fennel bulb, stalk removed, core removed and bulb very thinly sliced

  • 1 apple, thinly sliced into matchstick shaped pieces

  • 1/4 small red onion, thinly sliced (optional)

  • 2 tablespoons lemon juice or apple cider vinegar

  • 4 tablespoons olive oil or mayonnaise 

  • 1 tablespoon sweetener of choice 

  • Salt and pepper to taste 

DIRECTIONS

  1. Into a large bowl, combine lemon juice or vinegar, olive oil or mayonnaise, sweetener, salt and pepper. Mix to combine.

  2. Into the bowl of dressing, add the sliced fennel, apple and red onion.

  3. Mix thoroughly to combine. Taste and adjust seasonings as needed.

  4. Optionally, garnish with a few chopped fennel fronds (the fluffy green part at the top of the stalk).

  5. Serve alongside any meal. Goes well with rich foods that could use a   balancing fresh crunchy bite.
